Tonight after work I decided that it was time to get all the great tomatoes from our garden into jars. We had good crop of very diverse tomatoes. I tried to can as many as I could and milled the rest into sauce. I’ve done this a few years. My buddy Bernie came down for the first harvest to help me run the pressure cooker for the first time. It took us both a full day to can 12 jars. We figured that based on our job skills that each jar was about $80 if we were being paid by our company to do the work. So…. canning is more nostalgia and experience than the most productive use of our time. Well, at least we did not get bocholism.
